MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Palak Paneer Categories: Indian Yield: 1 Batch 3 c Fresh spinach; chopped 1 c Paneer; cubed 1/2 c Tomatoes; chopped 1 Onion; chopped 1 Serrano; chopped 1/2 ts Fresh ginger; grated 1 ts Fenugreek leaves -OR- 1 pn Fenugreek powder 1 c Water 1 tb Oil 1 ts Salt Sauté paneer in 1 tb oil, drain, and set aside. Cook spinach and fenugreek leaves in water. Remove greens from the heat and pass through a blender. Heat remaining oil in a separate pan and sauté the onions and ginger. Add tomatoes and mash well with a spoon. Add spinach mixture, serrano, salt, and fenugreek powder, if leaves are not available; mix well. Stir in paneer cubes and simmer for 3 minutes uncovered.
