MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: German Apple Pancake Categories: Breads, Fruits, Dairy, Spices Yield: 6 Servings MMMMM--------------------------PANCAKE------------------------------- 3 lg Eggs; room temperature 1 c Milk 3/4 c A-P flour 1/2 ts Salt 1/8 ts Ground nutmeg 3 tb Butter MMMMM--------------------------TOPPING------------------------------- 2 Tart baking apples; peeled, - sliced 4 tb Butter 2 tb Sugar Confectioners' sugar Heat a 10" cast-iron skillet in a 425°F/218°C oven. Meanwhile, in a blender, combine the eggs, milk, flour, salt, and nutmeg; cover and process until smooth. Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, until pancake puffs and edges are browned and crisp, 20 minutes. For topping, in a skillet, combine the apples, butter, and sugar; cook and stir over medium heat until apples are tender. Spoon into baked pancake. Sprinkle with confectioners' sugar.
