* Exported from MasterCook * Fasolakia Yiyantes Sto Fourno (Oven Baked Beans) Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Vegetables Greek Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 lb Dried giant white beans 2 c Oil 1 Garlic head 3 md Onions -- chopped 1 tb Celery -- chopped 1/2 c Parsley -- minced Salt & pepper -- to taste 1 c Water -- hot 1 3/4 lb Tomatoes -- peeled, - strained -OR- 1 tb Tomato paste -- plus: 1 1/2 c Water Additional water -- as needed Wash the beans, place in water, and soak them overnight. Drain them, then place in a pot of fresh cold salted water; cook for 45 minutes; drain. Meanwhile, place oil, garlic, and onions in a baking pan and bake in preheated 350°F oven until golden. Add beans, celery, parsley, salt & pepper, and hot water. Bake 30 minutes longer. Remove from oven, stir the beans, pour in tomatoes (or diluted tomato paste).
