MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Monastery Style Lentils Categories: Lentils Yield: 4 Servings 1/4 c Olive oil 2 lg Onions; chopped 1 Carrot; chopped 1/2 ts Dried thyme 1/2 ts Dried marjoram 3 c Stock 1 c Lentils; rinsed 1 pn Salt; to taste 1/4 c Fresh parsley; chopped 16 oz Can tomatoes 1/4 c Dry sherry 2/3 c Swiss cheese; grated Preparation time: 20 minutes Cooking time: 50 minutes Heat oil in a large pot and sauté the onions and carrot for 3 to 5 minutes, until softened and onion is translucent. Add dried herbs and sauté 1 minute. Add stock, lentils, salt, parsley, and tomatoes and cook, covered, until lentils are tender, about 45 minutes. Add sherry.
