MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Roasted Sweet Potato Salad Categories: Potatoes, Nuts, Fruits, Herbs, Sauces Yield: 6 Servings 4 c Sweet potatoes; peeled, diced 1 tb Olive oil 1/2 c Walnuts; chopped, toasted 1/3 c Dried cherries; chopped 1/4 c Fresh parsley; minced 2 tb Mayonnaise 4 1/2 ts White vinegar 1 tb Honey 1/2 ts Lime zest; grated 1/4 ts Salt Place potatoes on a 15x10x1" baking pan coated with cooking spray. Drizzle with oil; toss to coat. Bake @ 400°F/205°C for 30 to 45 minutes or until tender. Cool to room temperature. In a large bowl, combine the walnuts, cherries, parsley, and potatoes. In a small bowl, combine the mayonnaise, vinegar, honey, lime zest, and salt. Pour over potato mixture and toss to coat. Serve warm or cold.
