MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Never Fail Scalloped Potatoes Categories: Potatoes, Dairy, Cheese, Vegetables Yield: 6 Servings 2 tb Butter 3 tb A-P flour 1 ts Salt 1/4 ts Pepper 1 1/2 c Milk 1/2 c Cheddar cheese; shredded 2 lb Potatoes (4 c); - peeled, thin sliced 1 c Onions; - thin sliced, divided Set oven @ 350°F/175°C. In a small saucepan, melt butter; stir in flour, salt, and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted. Coat an 8" square baking dish with cooking spray. Place half the potatoes in dish; layer with 1/2 cup onion and half the cheese sauce. Repeat layers. Bake, covered, 50 minutes. Uncover; bake until bubbly and potatoes are tender, 10 to 15 minutes longer.
