MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Blueberries & Cream Coffee Cake Categories: Fruits, Dairy, Nuts, Breads Yield: 12 servings 1 c Butter; softened 2 c Sugar 2 lg Eggs; room temperature 1 ts Vanilla extract 1 3/4 c A-P flour 1 ts Baking powder 1/4 ts Salt 1 c Sour cream 1 c Unsweetened blueberries 1/2 c Brown sugar; packed 1/2 c Pecans; chopped (optional) 1 ts Ground cinnamon 1 tb Confectioners' sugar In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with sour cream, beating well after each addition. Fold in blueberries. Spoon half of batter into a greased and floured 10" fluted tube pan. In a small bowl, combine the brown sugar, pecans if desired, and cinnamon. Sprinkle half over the batter. Top with remaining batter; sprinkle with remaining brown sugar mixture. Cut through batter with a knife to swirl the brown sugar mixture. Bake @ 350°F/175°C until a toothpick inserted near the center comes out clean, 55-60 minutes.
