MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Country Potato Pancakes Categories: Potatoes, Vegetables Yield: 24 Servings 3 lg Potatoes (2 lb); peeled 2 lg Eggs; lightly beaten 1 tb Onion; grated 2 tb A-P flour 1 ts Salt 1/2 ts Baking powder Oil; for frying Finely grate potatoes. Drain any liquid. Add eggs, onion, flour, salt, and baking powder. In a frying pan, heat 1/8" oil over medium-high heat to 375°F/190°C. Drop batter by heaping tablespoonfuls in hot oil. Flatten into patties. Fry until golden brown, turning once. Serve immediately.
