                        Jessica's Apricot Chicken

   2                    Chickens -- cut up
                        Flour
                        Egg -- beaten
                        Matzo meal
   1                    Jar apricot jam
   1 1/2  c             Duck sauce or more jam
     1/2  c             Ketchup
   4      tb            Brown sugar or honey
   4      tb            Vinegar
                        Mushrooms (optional)

Coat chicken pieces in flour, dip in egg, roll in matzo meal. Bake
for 30 minutes at 350°F. Bring remaining ingredients to a boil and
pour over chicken. Bake 1 hour at 350°F and another 1 hour at 300°F.
Mushrooms may be added for the 2nd hour.
