* Exported from MasterCook * Spinach-Stuffed Chicken Recipe By : Quick Cooking - September/October 1998 Serving Size : 6 Preparation Time :0:00 Categories : Not Sent Quick Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 10 oz pkg frozen chopped spinach -- thaw/squeeze dry 1 c shredded Swiss cheese 3/4 c ricotta cheese 1/3 c grated Parmesan cheese 3 tbsp finely chopped onion 1 clove garlic -- minced 1/4 tsp salt 1/4 tsp pepper 1/4 tsp ground nutmeg 6 bone-in chicken breast halves 2 tbsp olive or vegetable oil 1 tsp paprika 1/2 tsp dried oregano 1/2 tsp dried thyme additional paprika -- optional Combine the first nine ingredients; gently stuff 1/2 cupful under the skin of each chicken breast. Place in a greased 15x10x1-inch baking pan. Combine oil, paprika, oregano and thyme; brush over chicken. Sprinkle with additional paprika if desired.
