MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Reuben Roll-Ups Categories: Breads, Poultry, Beef, Cheese Yield: 2 servings 2 sl Swirled rye & pumpernickel - bread 2 Boned, skinned, chicken - breast halves (4 oz ea) 1/4 ts Garlic salt 1/4 ts Pepper 2 sl Ementhal cheese 2 sl Deli corned beef 2 tb Thousand Island dressing Additional Thousand - Island dressing - (optional) Set oven @ 425°F/218°C. Tear bread into 2" pieces; place in a blender. Cover and pulse to form coarse crumbs; transfer to a shallow bowl. Pound chicken breasts with a meat mallet to 1/4" thickness; sprinkle with garlic salt and pepper. Top with cheese and corned beef. Roll up chicken from a short side; secure with toothpicks. Brush outsides with dressing; roll in bread crumbs. Place roll-ups on a greased baking sheet, seam side down. Bake until chicken is no longer pink, 20-25 minutes.
