MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Baked Bruschetta Chicken Categories: Poultry, Cheese, Vegetables, Herbs Yield: 4 Servings 3 tb Extra virgin olive oil; - divided 1 tb Balsamic glaze 1/4 ts Salt 4 Chicken breast halves - (6 oz ea); boned, skinned 8 sl Fresh mozzarella cheese; - thin MMMMM---------------------BRUSCHETTA TOPPING-------------------------- 4 tb Extra virgin olive oil 2 Shallots; fine chopped 2 cl Garlic; minced 1 lb Cherry tomatoes; halved 1/4 ts Salt 1/8 ts Pepper 1/2 c Fresh basil; sliced 2 tb Balsamic glaze Crushed red pepper flakes - (optional) Set oven @ 400°F/205°C. In a shallow dish, whisk 2 tb oil, 1 tb balsamic glaze, and 1/4 ts salt. Add chicken; turn to coat. Let stand 10 minutes. In a large cast-iron or ovenproof skillet, heat 1 tb oil over medium heat; brown chicken on both sides. Bake 12 minutes. Top with cheese. Bake 3-5 minutes longer. Meanwhile, for topping, in a large skillet, heat oil over medium heat. Add shallots; cook and stir until tender, 2 to 3 minutes. Add garlic; cook 1 minute longer. Stir in tomatoes, salt and pepper. Cook and stir until tomatoes are tender, 2 to 3 minutes. Remove from the heat. Stir in basil. To serve, spoon topping over chicken. Drizzle with balsamic glaze.
