MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pepper & Salsa Cod Categories: Seafood, Citrus, Vegetables, Rice Yield: 2 servings 2 Cod or haddock fillets - (6 oz ea) 1 ts Olive oil 1/4 ts Salt 1 ds Pepper 1/3 c Orange juice 1/4 c Salsa 1/3 c Bell pepper; julienned 1/3 c Red bell pepper; julienned Hot cooked rice Set oven @ 350°F/175°C. Brush both sides of fillets with oil; place in a greased 11x7" baking dish. Sprinkle with salt and pepper. Pour orange juice over fish; top with salsa and peppers. Bake, covered, until fish just begins to flake easily with a fork, 17-20 minutes. Serve with rice.
