MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Baked Filets With Stuffing Categories: Seafood, Breads, Herbs, Vegetables, Pork Yield: 6 Servings 4 c Day-old bread; in cubes 1/4 c Onion; minced 1/2 c Celery; minced 1/2 c Butter; melted 1/2 ts Salt 1/4 ts Pepper 3/4 c Poultry seasoning (Bell's) 1 c Broth or stock 6 Boston Bluefish (pollock) or - other fish filets (8 oz ea) 1/4 c Bacon; cooked crisp and - crumbled 1/4 c Olives; or more, chopped, - stuffed Thaw fish if frozen. Saute onion and celery in 1/4 cup butter. Mix with bread cubes. Add seasonings and toss to mix. Add broth about 1/4 cup at a time and mix well. Stuffing should not be too soggy. Spread stuffing in thin layers in a greased, shallow baking pan. Arrange filets on top of the stuffing. Mix remaining quarter-cup of butter, bacon and olives. Sprinkle over filets. Bake in a moderate (350°F/175°C) oven for 35 to 40 minutes or until fish is fork tender. To serve, use a bread spatula to lift fish and stuffing together. Serve with buttered squash and fried onions.
