---------- Recipe via Meal-Master (tm) v8.05 Title: Roast Fish with Potatoes and Olives Categories: Fish, Vegetables Yield: 2 Servings 3 Baking potatoes,peeled and -sliced 4 6 oz. pieces sea bass, -snapper or other white fish Salt and freshly ground -pepper 1/4 c Olive oil 2 ts Chopped garlic 3 Bay leaves 12 Black olives, pitted 1/4 c White wine 1/4 c Water 2 Frozen or canned artichokes, -quartered Boil potatoes until crisp-tender, about 5 minutes. Drain and place in bowl. Toss with olive oil, garlic, bay leaves, black olives, artichokes, wine and water. Preheat oven to 450°F. Season fish with salt and pepper. Place potatoes in a baking dish along with marinade. Top with fish. Bake for 15 - 20 minutes or until potatoes are crusty and fish is cooked.
