MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Lime Zested Salmon Categories: Fish, Seafood Yield: 4 Servings 4 Salmon fillets (4 oz ea) 2 tb Green onions; chopped 2 tb Sherry 1 1/2 ts Low sodium soy sauce 1 ts Ginger; peeled, grated 1 ts Vegetable oil 1/2 ts Lime zest; grated 1 Ripe mango; - cut into 12 wedges Place salmon in an 8" square baking dish. Combine green onions and next 6 ingredients; stir well. Pour over salmon. Cover and marinate in refrigerator for 30 minutes. Bake, uncovered at 450°F for 15 minutes or until salmon flakes easily when tested with a fork. Serve with mango wedges.
