* Exported from MasterCook * Shrimp and Rice Recipe By : Carole Toso (TDRH33B) Serving Size : 6 Preparation Time :0:00 Categories : Italian Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 lb Medium shrimp -- cooked and cut 3 c Long grain rice -- cooked Pam 3/4 c Sour cream 2 c Fresh mushrooms -- sliced 2 tb Mayonnaise 1/2 c Onion -- chopped 2 ts Mustard 1/2 c Green onions -- sliced 1 c Cheese -- shredded 3 c Garlic -- crushed 2 tb Fresh parsley -- chopped Coat a large non-stick skillet with pam. Place over medium-high heat until hot. Add mushrooms, onion, green onion, and garlic. Saute until tender. Set aside. Place the rice in a 2 qt casserole dish coated with pam. Place shrimp over rice. Combine sour cream, mayonnaise, and mustard, spoon over shrimp. Top with mushroom mixture. Sprinkle the cheddar over the top. Cover and bake in 350°F oven for 30 minutes or until heated through.
