MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Caesar Florentine Categories: Five, Poultry, Cheese, Greens, Breads Yield: 4 Servings 2 c Parmesan cheese; grated, - divided 2 c Caesar salad croutons; - coarse crushed, divided 1 c Fresh baby spinach 1 c Creamy Caesar salad - dressing; divided 4 Chicken breast halves - (8 oz ea); bone-in, skinned Set oven @ 375°F/190°C. In a large bowl, combine 1 cup cheese, 1 cup crushed croutons, spinach, and 1/2 cup salad dressing. Cut a pocket in the thickest part of each chicken breast; fill with cheese mixture. Place remaining dressing and crushed croutons in separate shallow bowls. Dip chicken in dressing, then roll in croutons. Transfer to a greased 13x9" baking dish. Bake, uncovered, 30 minutes.
