MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Taco Lasagna Categories: Beef, Vegetables, Beans, Cheese Yield: 9 Servings 1 lb Ground beef 1/2 c Bell pepper; chopped 1/2 c Onion; chopped 2/3 c Water 1 oz Env taco seasoning 15 oz Can black beans; rinsed, - drained 14 1/2 oz Diced tomatoes with green - chilies; undrained 6 Flour tortillas (8") 16 oz Can refried beans 3 c Shredded Mexican cheese - blend In a large skillet, cook the beef, green pepper, and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in black beans and tomatoes. Simmer, uncovered, for 10 minutes. Place 2 tortillas in a greased 13x9" baking dish. Spread with half of the refried beans and half of the beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake @ 350°F/175°C for 25 to 30 minutes or until heated through and cheese is melted.
