MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Linguine & Oyster Mushrooms With Gremolata Categories: Pasta Yield: 4 Servings 1 lb Linguine 2 tb Olive oil 1/4 c Shallots; minced 2 1/2 c Oyster mushrooms; sliced Salt Black pepper; freshly ground 1/3 c Gremolata MMMMM-------------------------GREMOLATA------------------------------ 1/3 c Fresh parsley; chopped 2 cl Garlic; chopped 1 Lemon; grated zest of 2 tb Nuts or seeds; ground - (optional) Gremolata: Gremolata is a flavorful garnish made with lemon, garlic, and parsley. It can be used to enhance certain stews, pastas, and sautéed dishes. Mince the parsley, garlic, and lemon zest together until well combined. Cover tightly and refrigerate until ready to use. For best flavor, use the gremolata the same day it is made, but it will keep for a day or so in the refrigerator. Pasta: Bring a large pot of salted water to a boil over high heat. Cook the linguine, stirring occasionally, until al dente. While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the shallots, cover, and cook until softened, about 5 minutes. Add the mushrooms and cook, stirring frequently, until they begin to soften, about 3 minutes. Season to taste with salt and pepper. Stir in about 1/2 cup of the hot pasta water and the gremolata. Drain the pasta and place in a large, shallow serving bowl. Add the mushroom and gremolata mixture and toss gently to combine.
