* Exported from MasterCook * Todd Marn Gai Recipe By : Jim in Columbus (TWWR12A), OH, Jan 17, 1992 Serving Size : 3 Preparation Time :0:00 Categories : Thai Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Patties: 14 oz Ground chicken -- uncooked 1/4 c Canned coconut milk 3 ts Red curry paste 1 tb Fish sauce 1 pn Sugar 6 Green beans -- thin sliced Sauce: 6 tb Sugar 1/2 c Rice vinegar 1/2 ts Red pepper flakes 1 tb Peanuts -- finely chopped 1/4 ts Fresh ginger -- minced 1/8 ts Garlic -- minced 1/4 c Cucumber -- peeled, chopped In mixer bowl, combine ground chicken, coconut milk, curry paste, fish sauce, and sugar. Beat with mixer until doughy. Fold in green beans. Flour hands and shape mixture into 6 thin patties. Mixture will be very soft. Deep-fry, 1 or 2 at a time @350°F until golden brown on both sides. Drain on paper towels. Serve hot with cucumber sauce on the side. Yield: 3 Servings Sauce: Combine all ingredients, except peanuts, and stir until sugar is dissolved. Add cucumber. Chill for at least 30 minutes. Serve in individual dishes topped with peanuts. Note: Some add 1/2 ts minced garlic to patty mixture. - - - - - - - - - - - - - - - - - -
