MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Roasted Garlic And Bean Spread Categories: Spread Yield: 3 Cups 12 cl Garlic (1 hd); separated - but not peeled 28 oz Small white beans (2 cans) 1/4 c Lemon juice 1 tb Olive oil 1 tb Fresh parsley; snipped 1/4 c Red onion; minced 1/4 c Sweet green pepper; minced Bake garlic in a small baking dish at 400°F until soft, but not brown, about 15 minutes. When cool, slip garlic skins off and trim the ends. Place half the beans, the lemon juice, oil, and garlic in a food processor. Puree until smooth, then transfer to a medium bowl. Stir in remaining beans, parsley, black pepper, and half the onions and green peppers. Mash with a fork. Garnish with the remaining onions and peppers.
