MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken With Peach-Avocado Salsa Categories: Poultry, Fruits, Vegetables, Chilies, Citrus Yield: 4 Servings 1 md Peach; peeled, pitted, - chopped 1 md Ripe avocado; peeled, pitted - diced 1/2 c Red bell pepper; chopped 3 tb Red onion; fine chopped 1 tb Fresh basil; minced 1 tb Lime juice 1 ts Hot pepper sauce 1/2 ts Lime zest; grated 3/4 ts Salt; divided 1/2 ts Pepper; divided 4 Chicken breast halves - (6 oz ea); boned, skinned For salsa, in a small bowl, combine peach, avocado, red pepper, onion, basil, lime juice, hot pepper sauce, lime zest, 1/4 ts salt, and 1/4 ts pepper. Sprinkle chicken with remaining 1/2 ts salt and 1/4 ts pepper. On a lightly greased grill rack, grill chicken, covered, over medium heat 5 minutes. Turn; grill until a thermometer reads 165°F, 7 to 9 minutes longer. Serve with salsa.
