MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Potato Cheese Soup Categories: Soups Yield: 4 Servings 5 md Potatoes; up to 7 1 md Onion; chopped 4 tb Butter; up to 6 tb 3 Celery ribs; chopped 1 Carrot; grated 3 tb Flour; up to 4 tb 2 c Milk 1 tb Fresh parsley; or more 6 S Bacon; up to 8; cooked, -crumbled 2 ts Chicken bouillon; up to 3 ts 1 lb Cheddar cheese; grated Peel, dice, and cook potatoes in lightly salted water until tender. Reserving water, drain potatoes and set half aside. Mash remainder of potatoes with a small amount of water. Melt butter in a large saucepan. Sauté onion, celery, and carrot. Stir flour into sautéed vegetables all at once and continue stirring, over low heat until flour expands. Gradually add milk, stirring constantly until thickened. Stir in mashed potatoes.
