MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cream Of Squash Soup Categories: Soups Yield: 4 Servings 1 c Onion; minced 2 tb Margarine 2 1/2 c Chicken broth 1 c Winter squash; cooked 1/2 ts Ground cinnamon 1/4 ts Nutmeg Salt & pepper 3/4 c Cream or milk Croutons; toasted In a large saucepan, sauté onion in the margarine until tender. Add 1 cup chicken broth and simmer for 10 minutes. Gradually pour into blender and blend thoroughly. Return to saucepan. Add squash, remaining broth, and seasonings. Bring to a boil; reduce heat and stir until smooth. Cover and simmer for 10 minutes. Add cream. If milk is used, add an additional 2 tb margarine. Serve with toasted croutons.
