MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cream Of Carrot Soup Categories: Soup, French Yield: 4 Servings 1 Onion; sliced, chopped 2 cl Garlic; peeled, smashed 1 1/2 c Celery; sliced 3 c Carrots; peeled, - cut into small rounds 2 c Turnip; peeled, - cut into 1" cubes 1 sm Potato; peeled, - cut into 1" cubes 1 ts Sugar 4 tb Unsalted butter 5 c Chicken stock or - vegetable stock 1 ts Lemongrass; thinly sliced Salt and pepper Preparation time: 10 minutes Cooking time: 30 minutes Not only is was so delicious, super healthy, but very easy to make. A little chopping up and the stove does it all. In a large pot melt the butter. Add the carrots, onions, and sauté until soft. Add the sugar, celery, turnip potatoes, salt and pepper, lemongrass, and chicken stock. Bring to a boil, lower the heat and simmer until all the vegetables are tender. Around 20 to 30 minutes. Once the vegetables are tender, place them in a blender or food processor and puree. Return the puree to the cooking pot and season accordingly. Serve hot sprinkled with chives or parsley.
