* Exported from MasterCook * Cheesy Grits Recipe By : http://www.diabetes.org/ada/rcptoday.html Serving Size : 2 Preparation Time :0:00 Categories : Diabetic Breakfast & Brunch Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c Water 1/2 c Quick grits 3/4 c Reduced-fat cheddar cheese -- - shredded 1 tb Reduced-fat margarine 2 tb Chopped green chiles or - picante sauce 1 Egg -- separated 1/4 c Skim milk Nonstick cooking spray Preheat oven to 350°F. Bring water to boil in heavy sauce pan. Stir in grits. Return to boil, then reduce heat, partially cover, and cook for 5 minutes. Stir occasionally. Add cheese a little at a time until it melts. Add margarine and chiles. Stir well. Beat egg yolk with milk and stir into grits. Whip egg white until stiff and fold into grits. Pour into a 5x5" casserole dish sprayed with nonstick cooking spray. Bake 45 minutes until a knife inserted comes out clean. Remove from oven and let stand 5 minutes before cutting.
