MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Banana Bread Categories: Breads, Fruits, Nuts Yield: 2 Loaves 2 c Gluten-free A-P baking - flour; without xanthan gum 1 ts Baking soda 1/4 ts Salt 4 lg Eggs; room temperature 2 c Ripe bananas; mashed 1 c Sugar 1/2 c Unsweetened applesauce 1/3 c Canola oil 1 ts Vanilla extract 1/2 c Walnuts; chopped Set oven @ 350°F/175°C. In a large bowl, combine flour, baking soda, and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil, and vanilla. Stir into dry ingredients just until moistened. Transfer to 2 greased 8x4" loaf pans. Sprinkle with walnuts. Bake until a toothpick inserted in the center comes out clean, 45 to 55 minutes.
