MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Peanut Butter Kiss Cookies Categories: Cookies, Snacks, Nuts, Chocolate, Fruits Yield: 48 servings 1/4 c Butter-flavored shortening 1 1/4 c Brown sugar; packed 3/4 c Creamy peanut butter 1 lg Egg; room temperature 1/4 c Unsweetened applesauce 3 ts Vanilla extract 1 c White rice flour 1/2 c Potato starch 1/4 c Tapioca flour 1 ts Baking powder 3/4 ts Baking soda 1/4 ts Salt 48 Milk chocolate kisses; - unwrapped In a large bowl, beat shortening, brown sugar, and peanut butter until blended. Beat in egg, applesauce, and vanilla (mixture will appear curdled). In another bowl, whisk rice flour, potato starch, tapioca flour, baking powder, baking soda, and salt; gradually beat into creamed mixture. Refrigerate, covered, 1 hour. Set oven @ 375°F/190°C. Shape dough into forty-eight 1" balls; place 2" apart on ungreased baking sheets. Bake 9 to 11 minutes or until slightly cracked. Immediately press a chocolate kiss into center of each cookie.
