MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Pumpkin Cookies With Cream Cheese Frosting Categories: Cookie, Snacks, Squash, Spices Yield: 48 servings 1 c Butter; softened 2/3 c Brown sugar; packed 1/3 c Sugar 1 lg Egg; room temperature 1 ts Vanilla extract 1 c Canned pumpkin 2 c Gluten-free A-P baking - flour 1 1/2 ts Ground cinnamon 1 ts Baking soda 1/2 ts Salt 1/4 ts Baking powder MMMMM---------------------------GLAZE-------------------------------- 1 1/2 c Confectioners' sugar 1 1/2 ts Vanilla extract 3 tb Milk Set oven @ 350°F/175°C. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Add pumpkin; mix well. Combine the flour, cinnamon, baking soda, salt, and baking powder; gradually add to creamed mixture and mix well. Drop by tablespoonfuls 2" apart onto greased baking sheets. Bake until edges are lightly browned, 8-10 minutes. Remove to wire racks to cool completely. In a small bowl, whisk confectioners' sugar, vanilla, and enough milk to achieve desired consistency; drizzle over cookies.
