MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Maple Baked Root Vegetables Categories: Vegetarian Yield: 4 Servings 4 md Carrots; cut into 1" chunks 2 md Parsnips; peeled, cut into - 1" chunks 2 sm Turnips; peeled, cut into 1" - chunks 1 sm Rutabaga; peeled, cut into - 1" chunks 6 Shallots; halved 2 tb Olive oil 2 tb Pure maple syrup 1 ts Dried thyme 1/2 ts Smoked paprika (optional) Salt Black pepper; freshly ground Preheat the oven to 450°F. Lightly oil a roasting pan or baking dish. Place the carrots, parsnips, turnips, rutabaga, and shallots in a large bowl. Add the olive oil, maple syrup, thyme, paprika (if using), salt, and pepper to taste, and toss to combine well. Transfer the vegetables to the prepared baking dish and bake until soft on the inside and caramelized on the outside, about 1 hour, stirring gently every 20 minutes to ensure even browning.
